Stage 1 uses a 325 grit coarse diamond wheel for quick edge setting and dull edge repair. Stage 2 uses a 1000 grit extra-fine diamond wheel for honing and refining the edge. Stage 3 uses a manual ceramic V-slot for final refining, burr removal, and quick touch-ups.

Which stage should I start with?

For a very dull knife, start with Stage 1, then move to Stage 2 and finish with Stage 3. For regular maintenance, Stage 2 or Stage 3 may be enough. Avoid using Stage 1 unnecessarily, as the coarse diamond wheel removes material faster.

How many pulls are needed to sharpen a knife?

For a dull knife, start with about 15 smooth pulls. Very dull edges may need around 20 pulls. For regular touch-ups, about 5 pulls may be enough. Harder steel blades may require more pulls than softer steel blades.

Should I press hard when using the SHARPAL 198H?

No. Use light, even pressure and pull the knife smoothly through the slot. Pressing too hard can reduce control, remove too much metal, or cause the wheel to slow down.

Can the SHARPAL 198H sharpen serrated knives?

The 198H can be used for light touch-ups on some serrated knives with the manual ceramic Stage 3. Do not use the electric diamond wheels on serrated edges. Deep or specialized serrations are better sharpened with a tapered rod-style sharpener.
